Blueberry Orange Bran Muffins

  • 3 Tbsp Coconut Oil
  • ½ cup organic wheat bran
  • ½ cup Cold Milled Flax Seeds
  • ½ cup frozen orange juice concentrate
  • ½ cup yogurt (plain)
  • 3 Tbsp molasses
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 cup organic wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup blueberries
  1. Heat oven to 375°.
  2. Lightly oil standard-size muffin tins, or use paper liners.
  3. Combine bran, Cold Milled Flax Seeds, frozen OJ concentrate, yogurt, molasses, Coconut Oil, egg, and vanilla in a large mixing bowl. Let stand for 10 minutes.
  4. Mix flour, baking powder and baking soda in a small bowl.
  5. Sift dry ingredients into the bran mixture just until dry ingredients are moistened.
  6. Do not overmix.
  7. Then spoon batter into muffin cups, filling each about ⅔ full.
  8. Bake in middle rack of the oven for 12-18 minutes or until done.
  9. Cool on rack, then enjoy!
  10. Makes 12 small to medium muffins
