Ingredients
  • 1 cup (240 ml) Honey
  • 2 Tbsp. (30 ml) Concentrated orange juice
  • ½ cup (120 ml) Coconut Oil
  • ½ cup (120 ml) Whole wheat flour
  • 1 ½ cup (360 ml) All purpose flour
  • 1 tsp. (5 ml) Baking soda
  • 2 Free range eggs
  • 2 cups (480 ml) Sliced apple
  • ½ cup (120 ml) Chopped hazelnuts
  • ½ lb. (200 g) Cranberries
  • 1 tsp. (5 ml) Cinnamon
  • 1 tsp. (5 ml) Sea salt
  • 1 tsp. (5 ml) Vanilla
Instructions
  1. Whip honey at high speed until it turns white (about 10 minutes.)
  2. Blend Coconut Oil and orange juice concentrate.
  3. Add eggs and vanilla and beat well.
  4. Combine dry ingredients in a separate bowl and add to the honey mixture.
  5. Stir in apples, cranberries and nuts.
  6. Bake in a well greased pan (9”X13”), for 45-50 minutes at 350°F (180°C).
