  • 2 Eggs, separated
  • 2 ½ cups (600 ml) Milk
  • 4 Tbsp.(60 ml) Coconut Oil
  • 2 cups (480 ml) Whole wheat flour or Kamut flour
  • ½ cup (120 ml) Wheat germ
  • 2 tsp.(10 ml) Baking powder
  • 1 tsp.(5 ml) Baking soda
  • 1 cup (240 ml) Cooked Quinoa
  1. Beat egg whites until stiff.
  2. Combine flour, wheat germ, baking soda and baking powder in a mixing bowl.
  3. In another bowl, combine milk and oil and add this to dry ingredients.
  4. Fold in cooked quinoa and beaten egg whites.
  5. Fry on hot griddle.
  6. Serve with yogurt, applesauce, syrup or your favorite preserves.
