Blackened Scallops, Garden Greens, Sesame Mayonnaise

Ingredients
  • 2-2/16 oz.(600 g) Fresh sea scallops
  • 1 Egg yolk
  • ¾ cup (180 ml) Sesame Oil
  • 1 ½ Tbsp.(20 ml) Balsamic vinegar
  • 1-1/16 fl. oz. (60 ml) Fish stock
  • 1 ¾ oz.(50 g) Cajun spice
  • 2 Tbsp.(30 ml) Olive Oil
  • 2 Tbsp.(30 ml) Sesame seeds (toasted)
  • Selection of market available greens, if possible include organic baby lettuce
Instructions
  1. Beat egg yolk with electric mixer or blender on medium speed.
  2. Pour in Sesame Oil slowly.
  3. Add vinegar occasionally.
  4. If mayonnaise becomes too thick, add fish stock until mayonnaise pours smoothly from a spoon.
  5. Season with half the cajun spice.
  6. Mix scallops with the rest of the cajun spice and Olive Oil in a small bowl.
  7. Heat a heavy bottomed pan to just under the smoking point.
  8. Saute scallops in this pan until cooked.
  9. Season with sea salt.
  10. Arrange greens on a plate, placing scallops on the lettuce.
  11. Drizzle mayonnaise over scallops.
  12. Garnish with toasted sesame seeds.
