Deceptively Delicious Chickpea Salad

Chickpea Salad

  • 3 cups finely chopped fennel bulb
  • 2 cups chopped tomato
  • 1¾ cups finely chopped red onion
  • 1 cup chopped fresh basil
  • ⅓ cup Omega Nutrition Balsamic Vinegar
  • 1 tablespoon Omega Nutrition Olive Oil
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon salt
  • 4 garlic cloves, minced
  • 2 15½-ounce canned chickpeas, rinsed and drained
  1. Combine all ingredients in a bowl; toss well. Let stand 30 minutes.

  1. I love the fact that it has basil in this salad. The leaves are a nerve tonic and also sharpen memory. It also promotes the removal of the catarrhal matter and phlegm from the bronchial tube, thus improving respiratory function.

    And of course, it tastes great.
