Pumpkin Spice Chocolate Chip Cookies

Gluten-free, Grain-free, Dairy-free, and Nut-free cookies that are sure to please everyone this holiday season. These cookies remind me of pumpkin pie in all the best ways. Kids love them too!
Pumpkin Spice Chocolate Chip Cookies

2/3 cup organic pumpkin purée (do NOT use sweetened pie filling)
1/2 cup Omega Nutrition pumpkin seed butter
1 1/2 tbsp Omega Nutrition pumpkin protein powder
1/4 cup organic raw cane sugar or coconut sugar
1/2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
1 free range egg
1/2 cup mini chocolate chips (I use the EnjoyLife brand as they are free of most allergens)
Nutmeg ( I use around 1/3 tsp, but you can use slightly more or less, depending on how much you like nutmeg. If you really can’t stand it, you could use Cinnamon instead)

Because the batter does not contain any grain or gluten, it is a good idea to make relatively small cookies. With the recipe above you should make at least 12-15 cookies.

Bake at 350 degrees Fahrenheit for 15 min
Let cool for 5 min before transferring with spatula to a plate.

These are terrific with a hot cup of nice chai tea or coffee, or a tall cool glass of your favourite dairy-free milk (I like mine with Almond milk). Enjoy!
